These peppers are very tasty and full of vegetables. I serve them with a little bit of home made pesto and a couple of shavings of parmesan but these could be left out if you wanted to be super healthy or on a bit of a dairy free diet. For the peppers- I serve one pepper per person but Mr B can eat about 3 in one sitting. The recipe here is for four full peppers. Use red, yellow or orange peppers.
